SOIL TYPES | The vineyards are located directly below an amphitheatre hollowed out by the river Orbieu, in the Lagrasse area, at the foot of Mount Alaric. Partly sheltered by the southern tip of Mount Alaric from the westerly ‘Cers’ wind that blows across lower Languedoc, Lagrasse enjoys a Mediterranean climate that is very conducive to late ripening. The elevation of the vineyard, between 150 and 250 metres above sea level, mitigates the high summer temperatures. |
WINEMAKING | The grapes are picked by hand in crates. Harvesting is only done in the morning to guarantee the freshness of the fruit. The grapes are pressed in whole clusters in a pneumatic press. The last of the press wine is discarded so that only the first, best quality wine is kept. Cold stabilisation then follows at around 3°C for 3 to 4 days to reveal aroma. The Syrah and Grenache are subsequently fermented together at low temperatures (18°C). 10% is barrel-fermented to add elegance and complexity. The wines are bottled very soon after the end of the winemaking process. |
TASTING NOTES | This aromatic, fruity rosé is soft with aromas of red berry fruits and the thirst-quenching freshness of garrigue flowers. Drink within 18 months after bottling. Tasting temperature: 12°C. |
